I know a lot of people prefer to leave games the way they are. Original, without continuity, without modern updates. That new games should be created instead, etc.
But in my opinion, if there had to be a remake of a PS1 or PS2 game, mine would definitely be GTA San Andreas. No doubt about it. Or else, any Resident Evil, Gran Turismo.
